Multi-award-winning chef Tom van Zeller has put together a range of seasonal tasting dishes. The seasonality of the fresh and local ingredients means the menu will change regularly, but example dishes include salmon served with bacon jam, avocado and watercress, rabbit with marmalade carrot and soil, and celeriac and apple remoulade.
