Lemon Flavour Fruit Cake
8oz Flour 1/4 teaspoon baking powder 8oz ground rice 7oz butter, softened 8oz caster sugar Grated rind of 2 Lemons 12oz of Currants 3 eggs beaten Milk to Mix Set Oven to 350F or Mark 4. Grease and line a 9-10 inch cake tin. Sift the flour, baking powder and ground rice together into a bowl. Rub in the butter until the mixture resembles breadcrumbs. Add the sugar, lemon rind and currants and stir together. Mix in the 3 eggs and sufficient milk to produce a dropping consistency. Spoon into the tin and bake for about 11/2 to 2 hours or until a skewer inserted comes out clean. Leave to cool in the tin and turn our onto a wire rack.
