A perfect partner for Wensleydale Cheese!
8oz Fine Oatmeal
1/2 level teaspoon salt
Cold Water to Mix
Pinch of Bicarbonate of soda
1oz of butter softened
Set oven to 300F or Mark 2. Grease a baking sheet. Put the oatmeal, salt and bicarbonate of soda into a bowl. rub in the butter and add just enough cold water to mix to a firm dough. Knead lightly on a surface dusted with oatmeal until the dough is smooth. Roll out thinly and cut into round biscuits with a plain cutter. Place on the baking sheet and bake for about 1 hour until crisp. transfer to a wire rack to cool. Serve cold with butter and cheese.

NEW FLIGHTS TO COPENHAGEN
New Scandinavian Airlines direct service starts
1 April 2014 – Customers checked in for Scandinavian Airline’s new direct flight to Copenhagen yesterday as Leeds Bradford Airport celebrated the start of the new twice weekly service. With a flight time of just one hour 40 minutes, prices start from just £66 one way or £119 return, including all taxes and charges. The new flights are expected to primarily attract the leisure traveler who can enjoy a weekend break, but also those passengers wishing to stay the working week in Scandinavia, with the Monday and Friday direct services between Leeds Bradford and Copenhagen.
Celebrations for the inaugural flight departing Leeds Bradford included a water cannon salute. Leeds Bradford Airport also handed two complimentary tickets to Leeds University students, Harriet Trayling & Joanna Mawdsley, helping them to travel to Copenhagen on the inaugural flight as part of their charity ‘Jailbreak’ escape.

We have always felt that room 9 was missing a chest of drawers but with the unusual shape of the room its been a struggle to find the right piece for the space - but we've done it! We will be updating our bedroom information pages shortly with a page for each room and a more extensive range of photo's so you can see exactly what you are getting when you book.
I have just finished this book (its a light read so don't feel intimidated!) and loved it! each story or legend is illustrated by one of Ian's beautiful paintings which have almost a quality of Silk Painting to them. The book is a light hearted stroll through the fables, tales and legends of the Yorkshire dales - with everything from Ghosts to Saints covered. The book is also useful for the tourist as mentions many interesting views, churches, villages and natural phenomenon which would be a good basis for planning a Dales Holiday or simply an enjoyable read!
All in all an excellent canter through the Dales and just wish Ian would bring out a range of Postcards!

12oz Whole Shrimps
8oz cod or haddock fillets
2 anchovy fillets
1 teaspoon anchovy essence
3-4 oz clarified butter for sealing
Good pinch of cayenne pepper
Good pinch ground mace
Pinch of Salt
5oz of butter softened
If using fresh shrimps, boil for 2 to 3 minutes and allow to cool. Shell the shrimps, cut up the flesh roughly and set aside. Wash the shells, put in a pan, just cover with water and boil for 20 minutes. strain off the liquid and use to simmer the cod of haddock fillets until cooked. Remove the fish from the pan and boil the liquid hard to reduce it to about 2 tablespoons. Put the fish, the reduced liquid and all the other ingredients, except the shrimps, into a food processor and blend to a smooth paste. Transfer to a bowl and work in the chopped shrimps. Pack the mixture into small posts and cover and seal with clarified butter. Store in a cool place. To make clarified butter, put the butter into a pan, bring to the boil and remove from the heat. The clear butter liquid will come to the top. Pour off very gently, as required, leaving the sediment in the bottom of the pan.
