1lb Butter Softened
1lb Caster Sugar 9 eggs 18oz Flour 1 1/2 teaspoons baking powder Grated rind and juice of 1 lemon 2 teaspoons mixed spice 8oz raisins 8oz currants 8oz sultanas 4oz chopped mixed peel Set oven to 350F or Mark 4. Grease and line a 9 or 10 inch cake tin. Cream the butter and sugar together in a bowl until light and fluffy. Beat the eggs in a bowl set over a pan of hot water until creamy and whisk in the creamed butter/sugar mixture. Sift together the flour, baking powder and mixed spice and fold into the mixture in the bowl. Stir in the dried fruit, mixed peel and lemon rind and juice and mix to a soft consistency. Put into the tin, make a depression in the center and bake for about 2 hours or until a skewer inserted comes out clean. Leave in the tin to cool and turn out onto a wire wrack.
